Mango Chutney w/Banana & Jerk Seasoning

Ingredients:
¼ cup golden raisins
¼ cup water
½ cup firmly packed brown sugar
½ cup chopped onion
¾ cup cider vinegar
1 tbsp Helen’s Tropical-Exotics Dry Jerk Seasoning
Juice and rind of 1 lime or lemon
1 ½ cup peeled diced mango
1 tbsp hot pepper sauce
1 tsp peeled, minced ginger root
1 ripe banana, diced

Soak the raisins in hot water to plump for 30 minutes.

In a non-aluminum saucepan, bring the ¼ cup water, sugar, onion and vinegar to a boil. Add the Helen’s Tropical-Exotics Dry Jerk Seasoning, lime juice, diced mango, hot sauce and ginger. Reduce the heat and simmer uncovered for 30 minutes, or until the mixture becomes thick. Stir in the plumped raisins and banana. Cover and chill before serving. This will keep in the refrigerator for several days.
